How does Master Hsu make the noodle dough thinner and smoother?

Do you like to eat noodles? Many people do. But have you ever wondered how noodles are made? At Hsu’s Noodle in the beautiful mountains of Shiding, you can learn the secret! The owner, Master Hsu, learned how to make noodles the old way at a young age. Now, every day, his team makes thousands of noodles by hand. It is a lot of work, but they want to create delicious food for people to enjoy.

 

  Making noodles by hand takes all day. Master Hsu and his team start very early to mix flour, water and salt to make dough. Then they knead the dough to get all the extra air out.

  After that, Master Hsu cuts the dough and rolls it into a thick, long rope. Next, he puts the rope of dough into a machine to make it thinner and smoother, creating long, thick noodles. Once this is done, workers put the noodles around two poles in a figure-eight pattern.

 

  Next, two workers each take a pole and face each other. One worker raises his pole to create a wave. This is called throwing the noodles. Once the noodles are thrown, the two workers each take one step back. This pulls and stretches the noodles. Then both workers take a step forward to relax the noodles. As they keep doing this, the noodles get longer and thinner.

  When you visit Hsu’s Noodle factory, you can try throwing noodles. After you finish, you can take them home.
